Affordable ground pork is transformed into a gourmet burger that will impress everyone who sits at your dinner table. With fresh herbs, lemon, mustard, melty brie, and a garlicky sun dried tomato mayo, these are the smash burgers you need in your life! Serve with fries on the side, naturally.
To make the burgers: In a large bowl, mix together the ground pork, herbs, lemon zest, dry mustard powder, salt, and pepper. Shape into 4 evenly sized ball-shaped portions.
Heat a large skillet over medium-high heat and add the oil. When the oil is hot, add one burger portion at a time and smash it flat with a spatula. Do this with all of the burger portions. Cook the burgers for 3-4 minutes, until deeply golden brown, then flip, top each burger with a slice of cheese, and cook for another 3 minutes.
Meanwhile, in a small bowl, stir together the mayo, sun dried tomatoes, basil, grainy mustard, garlic, and salt.
To assemble the burgers: Remove the pork burgers from the skillet and transfer to a clean plate. Cut the burger buns in half and toast them in the same skillet you cooked the burgers, for a minute or so. Slather the sun dried tomato mayo on both halves of the burger buns. Top with greens, then the pork burger. Devour immediately.
