Seared in a hot skillet, these smashed pork burgers with caramelized onions and mustard dill mayo are flavourful and juicy! The caramelized onions and melted cheese are the ultimate toppings, and that mustard dill mayo is so good not only on these burgers, but as a great dip for oven fries or roasted potatoes.
In a large 12-inch skillet, warm the oil over medium heat, add the onions and cook for 10 minutes, stirring occasionally, until the onions are tender and starting to brown. Add the sugar and salt, turn the heat to low and cook for another 10-15 minutes stirring occasionally, until the onions are browned and caramelized. Stir in the sherry or vinegar and cook for 30 seconds to deglaze the pan.
Meanwhile, in a large bowl, combine the ground pork, mustard powder, salt, garlic powder and pepper. With your hands, lightly work the mixture together and shape into 4 patties. Place these on a plate, cover with plastic wrap and refrigerate for at least 15 minutes.
While the patties are chilling, prepare the Mustard Dill Mayo: combine all of the ingredients in a small bowl, taste to adjust the seasonings.
To cook the burgers: Heat a large 12-inch cast iron skillet over medium-high heat. Add the canola oil. Place the pork patties into the hot skillet. Using a metal spatula, firmly press each burger into the pan. Cook the burgers for about 3 minutes, without moving them. This helps the bottoms get browned and crusty. Flip the burgers, press them into the pan again, then top with the onions and sprinkle with the cheese. Place a lid on the skillet and cook the burgers for another 3 minutes, until the cheese is melted.
To serve: Spread the mustard dill mayo on the buns. Add the lettuce, then top with the burgers. Serve immediately.
