With bold flavours and juicy shrimp, this creamy pasta is perfect for a midweek treat. Simple and delicious, it will taste like something you’ve enjoyed at your favourite restaurant.
Bring a large pot of salted water to a boil. Cook the pasta according to package directions. Reserve 2/3 cup of pasta water.
Meanwhile, add the oil and butter to a large skillet set over medium-high heat. Saute the onions for about 5 minutes, until lightly browned. Stir in the sundried tomatoes, mustard, pesto, and garlic. Cook for about 1 minute. Add the cream, reserved pasta water, and Cajun seasoning. Cook a few minutes longer until the sauce has thickened slightly.
Add the shrimp and cook until the shrimp are cooked through and the sauce has thickened, about 5 minutes. Add the drained pasta. Stir in the parsley or basil and season to taste with salt and pepper. Divide into bowls and garnish with plenty of Parmesan cheese.
