These Pork & Barley Meatballs are easy to make and delicious to eat! They can easily be incorporated into any meatball recipe.
Preheat oven to 375 °F (190 °C). Lightly spray a baking dish with cooking spray.
In a large bowl, combine ground pork, barley, Parmesan cheese, egg, mustard, onion powder, garlic, salt and pepper. Mix well with your hands. Form mixture into 1-inch (2.5 cm) meatballs and place in prepared baking dish.
Bake for about 35 - 40 minutes or until cooked through. Serve with your favourite sauce.
Yield: 16 meatballs.
*To prepare barley: Before cooking, rinse barley under cold water. In a pot, bring salted water and barley to a boil, partially cover the pot with a lid, reduce heat to a simmer and let cook for about 20-25 minutes or until al dente, or according to package directions.
