Zippy Salsa

Yellow mustard seed and mustard powder bring the zing to this "tastes like more" salsa recipe. Fresh cilantro makes a nice garnish.

Ingredients
 8 large tomatoes
 8 apples, peeled
 6 cloves garlic, minced
 1 jalapeno pepper
 2 green pepper
 1 red pepper
 1 large onion
  cup sugar
 2 ½ cups vinegar
 12 tsp cayenne pepper
 1 Tbsp dry mustard powder
 ½ Tbsp paprika
 2 Tbsp yellow mustard seed
 5 Tbsp coarse salt
 4 oz cans tomato sauce

Chop tomatoes, peppers and onions.

Grate apples.

Mix all ingredients together in a large kettle and cook until thickened to desired consistency, about one hour.

Fill canning jars leaving 3/4 inch (2 cm). Wipe off tops of the jars before putting on lids. Screw lids on tight then turn back about a quarter turn.

Process in steam canner (not a pressure cooker) or boiling water bath for 15 minutes. Cool jars.

Before storing, test each jar to be sure it has sealed by pressing down on lids. They should not move. Store in your pantry until ready to use.
