This bacon is versatile. Serve as a decadent brunch side dish along with sweet seasonal melon and toasted seed bread or crumble on a spinach salad.
Preheat oven to 350º F. Line a 13 x 9-inch baking sheet with foil and place bacon strips on baking sheet.
In a small bowl, combine mustard, brown sugar and pepper. Sprinkle each bacon strip with 1/2 tsp of mustard mixture.
Bake 12 minutes or until golden brown and bubbling on top and edges are ruffled, or until desired crispness is achieved.
