Peach, Mustard & Rum Vinaigrette

Peaches, fresh ginger, honey and a dash of dark rum join forces with vinaigrette staples for a salad dressing that tastes like a special occasion.

Ingredients
 ¼ cup canned peaches
 1 Tbsp lemon juice
 4 tsp white wine vinegar
 4 Tbsp canola oil
 1 tsp fresh ginger, grated
 5 tsp honey
 4 tsp dark rum
 1 tsp dry mustard powder
 kosher salt and freshly ground pepper, to taste

Instructions

In a small food processor, blend peaches with lemon juice and vinegar. Blend in canola oil with remaining ingredients. Refrigerate until ready to use.
