This mustardy, buttery cracker crumb crust is perfect for perking up affordable frozen fish fillets. Plain crackers such as saltines or Ritz add the best flavour and texture. If you don’t have crackers, use breadcrumbs! Serve with a coleslaw or a big green salad on the side.

Mustardy-Crumb-Topped-Fish

Ingredients
 1 cup saltine, soda or Ritz crackers (approximately 20)
 3 Tbsp melted butter
 1 ½ Tbsp Dijon mustard
 1 tsp Old Bay seasoning (or 1/2 tsp each garlic powder and paprika)
 ¼ tsp salt
 600 g boneless, skinless white-fleshed fish fillets such as cod, haddock or flounder
 lemon wedges, for serving

Preheat the oven to 425ºF. Line a baking sheet with parchment paper.

Place the crackers in a resealable bag and crush them with a rolling pin until they are quite fine.

Place the crackers, melted butter, mustard, Old Bay seasoning, and salt in a small bowl and stir to combine.

Pat the fish fillets dry. Place them on the baking sheet and pat the crumb mixture evenly onto each piece of fish. You may need to wet your hands to make the spreading easier.

Bake for 15 minutes until the crumb crust is golden brown and the fish flakes easily. Serve immediately with lemon wedges on the side.
