Mustard Bolognese Sauce on Spaghetti

This classic Italian meat-based sauce is slowly cooked to thicken and allow flavours to meld.

 2 Tbsp olive oil
 1 cup onion, chopped
 3 large cloves garlic, minced
 1 cup fresh tomatoes
 1 lb lean ground beef
 2 tsp salt
 ¼ tsp black pepper
 20 oz jar tomato and basil sauce
  cup prepared old style grainy mustard
 16 oz package dry spaghetti noodles
 3 qts boiling water
 Parmesan cheese (optional)

In a large, heavy pan, heat oil over medium heat. Saute onion, garlic and tomatoes until vegetables are soft and lightly coloured.

Add ground beef and season with salt and pepper. Cook until the meat is lightly browned, breaking chunks into small pieces.

Add pasta sauce and mustard, bringing the mixture to a rapid boil on high heat. Reduce heat and simmer until liquid almost evaporates.

Cover pan, reduce heat and simmer about an hour, stirring occasionally until sauce thickens.

Cook spaghetti noodles in 5 quart (5 1/2 L) pot with 3 quarts (3 1/2 L) of boiling water. Cook noodles about 10 minutes, stirring occasionally until they reach al dente stage.

Strain noodles. Pour sauce over noodles. Sprinkle with grated Parmesan cheese (optional) and serve immediately.
