Mardi Gras Picnic Salad

This kid-friendly salad recipe is quick, easy, fresh and nutritious and includes cucumber, cauliflower, celery and peppers. The Mardi Gras Picnic Salad is an ideal salad to take to potlucks and picnics.

Salad
 4 cups sliced cucumber (1/4 inch / 65 mm slices)
 2 cups bite-size cauliflower pieces
 1 cup chopped onion
 1 cup sliced celery
 1 red pepper, diced
 1 green pepper, diced
 2 tsp coarse salt
Dressing
 1 cup granulated sugar
 ¾ cup white vinegar
 1 Tbsp yellow mustard seed
 ½ tsp celery seed
 2 cloves garlic, minced

Instructions

Salad: In large bowl, combine cucumber, cauliflower, onion, celery and peppers.

Sprinkle with salt. Toss or stir well.

Let sit 2 hours. Drain well.

Dressing: In glass bowl, combine sugar, vinegar, mustard seed, celery seed and garlic. Stir well.

Microwave dressing on high for 2 minutes. Stir to dissolve sugar. Let cool.

Combine salad and dressing in 12 cup sealable container. Seal with lid. Shake a few times. Refrigerate until serving.

Store in an airtight container in the refrigerator up to 1 week.
