With wonderful textures and flavours, this is a simple and delicious salad that showcases the humble chickpea. With plenty of crunchy apple, toasted nuts, feta cheese, dried cranberries and red onion all tossed together in a light apple cider vinaigrette, this salad is perfect for the harvest season.

Ingredients
Salad:
 1 (540 mL/19 oz) can chickpeas, rinsed and drained
 1 large apple, such as Honey crisp, chopped
 ½ cup dried cranberries
 ½ cup toasted pecans or walnuts
 ½ cup crumbled feta cheese
 ¼ cup diced red onion
 2 Tbsp fresh lemon juice
 2 Tbsp chopped fresh parsley
Dressing:
 3 Tbsp extra virgin olive oil
 1 Tbsp apple cider vinegar
 1 Tbsp Dijon mustard
 1 Tbsp pure maple syrup
 salt and pepper to taste

In a large bowl, combine all of the salad ingredients.

In a small bowl, whisk together the dressing ingredients. Pour over the salad and toss well. Season to taste with salt and pepper.
