Ham Quiche Tarts with Dijon Mustard

These ham quiche tarts with Dijon mustard are tasty hot or cold, making them a good option for quick brunches or lunches.

 12 unsweetened, 3-inch (7.5 cm) prepared tart shells
 3 slices ham, cut into thin strips
 ½ cup cheddar cheese, shredded
 ½ cup mozzarella cheese, shredded
 3 large eggs, lightly beaten
 1 cup half and half cream
  cup Dijon mustard
 1 Tbsp green onions, chopped

Preheat oven to 350° F (180° C). Place ham and cheddar cheese evenly in tart shells.

In a bowl, combine mozzarella cheese, eggs, cream, mustard and green onions. Scoop 2 Tbsp (25 ml) of egg mixture into each tart shell.

Bake for 15-20 minutes or until quiche is firm. Cool for 5 minutes before serving.
