Grilled Brown Sugar and Mustard Chicken

This grilled chicken is super tender and jam-packed with flavour! It’s sweet and tangy, and turns the basic chicken breast into something quite special. It’s a recipe sure to be on repeat throughout the summer!

Ingredients
 4-6 boneless skinless chicken breasts
Marinade:
  cup grainy Dijon mustard
  cup packed brown sugar
 ¼ cup canola oil
 ¼ cup apple cider vinegar
 1 lemon, juiced
 1 lime, juiced
 3 garlic cloves, minced
 ½ tsp salt
 ¼ tsp pepper
 generous pinch red pepper flakes

Place the chicken in a non-reactive ceramic or glass baking dish.

Combine all of the marinade ingredients in a medium bowl and whisk well to combine. Reserve 1/4 cup of the marinade for serving, then pour the remaining over the chicken. Cover with plastic wrap and refrigerate for at least 6 hours or overnight.

Bring the chicken to room temperature. Preheat the grill to medium heat and grill the chicken for approximately 5-7 minutes on each side. Exact timing depends on the thickness of the chicken. To ensure the chicken is fully cooked, insert a thermometer into the thickest part of the chicken and it should read 165°F. Remove the chicken from the grill to a clean plate, tent with foil for 5 minutes. Arrange the grilled chicken on a platter and pour the reserved marinade over it. Garnish with additional lime and lemon slices, if desired.
