Asian Red Cabbage Slaw

This simple but colourful salad is an Asian twist on a traditional slaw. Make it ahead of time (at least an hour) to allow the flavours to infuse the vegetables.

Slaw
 3 cups red cabbage, thinly sliced or shredded
 2 cups carrots, coarsely grated
 2 green onions, sliced
 1 red pepper, diced
Dressing
 2 Tbsp canola oil
 2 Tbsp low sodium soy sauce
 1 Tbsp Dijon mustard
 1 Tbsp rice vinegar
 1 Tbsp maple syrup
 1 tsp garlic, finely minced
 1 tsp yellow mustard seed

Instructions

In a salad bowl, combine red cabbage, carrots, green onions and red pepper.

In a small bowl, whisk together canola oil, soy sauce, Dijon mustard, rice vinegar, maple syrup, garlic and mustard seed.

Toss salad with dressing. Serve and enjoy!
